v6 has predefined biomes which cannot be changed.
v5 and v7 can have their biomes replaced with others by mods like Etheral.

v6 has mostly monotone terrain with more "flat" areas.
caves are small and round, lava appears from -256 and below.

in v5 and v7 caves are more chaotic, like fissures in the earth and they connect to long tunnels.
lava is much deeper.

the terrain of v5 can be very extreme with wide plains and high mountains.
small "floating islands" can also be found occasionally.

the terrain of v7 is somewhere in the middle between v5 and v6.
it is usually more realistic but also has some very interesting shapes sometimes.

Most realistic is valleys.
