So what is Minetest Game? It is the “default” subgame which ships by default with Minetest (well, at least for some Minetest releases). If you are completely new to Minetest, it is a good entry point into the world of Minetest. You may want to read the Getting Started guide on the community wiki before proceeding.
Minetest Game will, from what I know, be developed alongside Minetest (the game engine). Minetest Game wants also to be easily extendable by mods, from which you find plenty in the Modding General and Mod Releases subforums. Not all mods are exclusively for Minetest Game. There are other Minetest Games as well, which you may try out later as well.
To get a vague idea about the goals/concepts of Minetest Game, see here
