Adding mobs could be done in a hit an miss way.
Make both passive and hostile type mobs and include in the game for us to test out, remove those that don't work out and each new patch include another set of mobs plus the community fixes to old ones.
Mobs could be taken from real life counter parts, domesticated animals, pasture animals, aquatic animals, air animals, and fantasy monsters or animals.
