Roast Chicken.

But not quite what you’re thinking, roast chicken legs, or Drumsticks. Possibly one of the cheapest meats you can buy in the western world.

6 Chicken Legs, frozen.

When they’re half thawed out liberally sprinkle them with Chicken Salt – see recipe in this section.

Put them in a ceramic baking dish – this is important later.

Preheat your oven to about 210 degrees Celsius. Spread fully thawed chicken legs evenly in dish and put them in the oven. After about 40 minutes turn the temperature back down to 170 and let them cook for another 40 minutes.

Perfectly roasted chicken, and cheap, but that’s not the cheap part.

Because you used a ceramic baking dish instead of a metal one the juices that ran out of the meat didn’t burn, they just turned a rich golden brown colour. That’s the best chicken stock you can get, after I retrieve my legs from the baking dish to eat I put a little water in the baking dish. When it’s cooled down I put it in the fridge. Tomorrow I’ll use that fresh chicken stock to make the best Chicken Vegetable Soup you ever tasted.
